Just to close the loop, I wanted to pass along that I abandoned vnc and ended up using xming (with putty) or mobaXterm (maybe a little quicker?) to meet my needs for a GUI. It doesn't give you a desk-top, but lets you run GUI type programs executed from the command line. I am able to use it for things like synaptic and virt-manager. With xming or mobaXterm, and webmin, I pretty much have my bases covered. I also like filezilla for general file/directory stuff (have to enable proftpd in webmin). One other idea that I really like is having my /home folder on another hard-drive.

Just as a matter of interest I'm running 12.04LTS on my box and VNC seem's to working fine, although I do suspect if I connected a monitor to it I would be greeted with a desktop instead of a CLI. I can even access the server from my MacBook without having to install a VNC app, I simply enable "Desktop Sharing" on the server, let the Mac find it and Bob's your uncle.
